Chicken schnitzel parmigiano

Ingredients

4 Chicken schnitzels, crumbed
¼ cup Oil
1 Canned tomatoes, diced
2 tbsp Tomato paste
1 tsp Dried basil
4 Sundried tomatoes, roughly chopped
6 slices Ham
1 cup Mozzarella cheese, grated
3 tbsp Parmesan cheese

Directions

  1. Preheat oven to 180 degC. Cut schnitzel pieces in half. Heat oil in a frying pan and cook schnitzels on both sides until golden. Drain schnitzels on paper towels.
  2. Place schnitzel in a 25cm ovenproof dish. Mix tomatoes, tomato paste, basil and sundried tomatoes together. Place ham slices over schnitzels.
  3. Pour tomato mixture on top, scatter mozzarella and parmesan cheese over it. Bake for 15 to 20 minutes or until golden.
