Apple and Cardamom Bread and Butter Pudding
A hearty bread and butter pudding, perfect for a cold winter evening.

|1 tsp||Ground cardamom|
|4 tsp||Brown sugar|
|12 pieces||White sliced sandwich bread|
- Preheat the oven to 180 degC. Heat milk, cream, sugar and cardamom in a small saucepan, almost to the boil, stirring to ensure sugar is dissolved. Allow to cool until warm and then combine with egg yolks and whisk to combine.
- Meanwhile, melt the first measure of butter in a frying pan over a medium heat, add the granny smith apples (peeled, cored and medium sliced) to the pan and sprinkle over brown sugar. Cook, turning at times for 5 minutes until apples are tender.
- Spread second measure of butter (25g) on bread and line a 30cm oval baking dish (approximately 6cm deep) with bread slices - butter side down. Spoon over apples and pour over cream mixture. Cover with remaining bread slices (butter side up).
- Bake for 30 minutes.
