Coconut and apple bircher muesli with berry salsa

We served this with a fresh berry salsa, but any combination of seasonal fresh fruit is ideal – even the humble sliced banana will taste delicious. Ready in 20 minutes plus time overnight to soak oats.

Berry salsa

Directions

  1. Soak oats, coconut, juice and honey over night. Chill.
  2. Add yoghurt and one cup of grated apple (We used rose apples. They are deliciously crunchy and juicy). Mix well.
  3. Divide mixture into 6 bowls and top with berry salsa.
  4. To make the berry salsa mix everything together and divide between the bowls.
