Lemon and barley water
|¾ cup||Pearl barley|
- Rinse the barley in a sieve until water runs clear.
- Place barley in a saucepan with grated lemon rind of 3 lemons and six cups of cold water. Bring to the boil over a medium heat and simmer for 10 minutes. Strain into a heatproof jug and discard the barley.
- Stir in lemon juice of 3 lemons and sugar until sugar is dissolved, then let mixture cool to room temperature. Chill before serving.
