Orange, chocolate and pistachio rice pudding

Directions

  1. Combine milk with sugar, orange rind and the split vanilla bean and bring to the boil. Add rice and stir until just boiling.
  2. Reduce heat and gently simmer for 30 minutes, stirring at all times.
  3. once the rice is cooked through, take off the heat and cool to room temperature. Fold in cream, pistachios and most of the chocolate, reserving extra chocolate to sprinkle on top with the extra orange rind.
  4. Refrigerate pudding until ready to serve.
