Mozzarella and pesto schnitzel parcels
A rich and easy way to spice up your schnitzel.

|8 slices||Beef schnitzel|
|1||Salt & freshly ground pepper, to season|
|250 g||Mozzarella cheese, sliced|
|¼ cup||Basil pesto|
|1 tbsp||Olive oil|
- Season schnitzel all over with salt and pepper and lay on a work surface. Arrange two slices of mozzarella on one half of each schnitzel and top each with a heaped teaspoon of pesto.
- Fold the empty side of each schnitzel over to cover the filling and secure by threading two toothpicks through each schnitzel parcel.
- Heat a non-stick frying pan, add a film of oil and place schnitzel parcels in the pan. Cook over a medium heat for 2 to 3 minutes on each side, or until browned on both sides and cheese has melted.
