Spicy pork patties with plum sauce

|600 g||Pork mince|
|¼ cup||Fresh coriander|
|1 to taste||Salt & freshly ground pepper|
|1 to fry||Extra virgin olive oil|
|½ cup||Plum sauce|
- Place pork mince in a bowl with crushed garlic, finely chopped spring onions, peeled and grated carrot and chopped parsley.
- Add egg and mix with your hands until combined. Season with salt and pepper
and mix well.
- Divide mixture into four and pat each piece into a flat pattie. Heat oil in a frying pan and pan-fry patties over a medium heat for 5 to 6 minutes on each side, until cooked through.
- Serve with plum sauce spooned over or on the side if preferred.
