Greek tart with cherry tomatoes

Ingredients

2 sheets Savory short crust pastry
2 Courgettes
1 cup Cherry tomatoes
½ cup Black olives
150 g Feta cheese
5 Eggs
1 to taste Salt & freshly ground pepper

Directions

  1. Preheat oven to 200C. Line a 23cm tart pan with pastry, trimming to fit as necessary. Bake blind for 10 minutes and then remove weights and bake a further 4 minutes.
  2. Reduce oven temperature to 180C. Place grated courgettes, tomatoes and olives in a bowl. Crumble over feta cheese.
  3. Beat eggs, salt and pepper together. Combine egg and courgette mixture and pour into pastry shell.
  4. Bake for 40 minutes until golden and set.
