Vietnamese Fish Burgers

|1 tbsp||Fish sauce|
|2 tbsp||Golden soy sauce|
|1 tbsp||White vinegar|
|2 tbsp||Sweet chilli sauce|
|3 tbsp||Lime juice|
- Chop fish fillets roughly and place in the bowl of a food processor with egg white, fish sauce, soy sauce, 1 teaspoon of lime rind, lime juice and mint. Process until roughly chopped.
- Shape 1 tablespoon of mixture into a patty and continue with remaining mixture. Heat oil in a frying pan and cook patties on each side until golden and cooked through.
- Heat rolls in oven for 5 minutes. Meanwhile combine carrot, cucumber, sugar, sweet chilli sauce and vinegar together in a bowl.
- Cut each roll in half. Place carrot salad on the base of a roll with a fish patty on top and then cover with the top of the roll.
