Macadamia crusted fish
Make this simple recipe as a nutritious mid-week meal for the family or combine it with some delicious salads in order to create a memorable dinner for guests. Almonds can be used instead of macadamias.

|¾ cup||Macadamia nuts|
|¼ cup||Fresh parsley|
|½ cup||Panko breadcrumbs|
|4 fillets||White fish|
- Place macadamia nuts, parsley and 1 tbsp lemon rind in the food processor and pulse until finely chopped. Combine with the panko crumbs.
- Lightly whisk eggs and water together, then pour into a shallow dish. Place crumb mixture in a separate shallow dish.
- Dip fish into the egg, then into crumb mixture until coated.
- Heat oil in a frying pan and cook fish in batches until goldenon each side.
