Spicy chicken salad

A simple, easy and cost effective mid-week meal.

Ingredients

1 Rotisserie chicken
1 Telegraph cucumber
2 Carrots
1 cup Mung bean sprouts
150 g Rocket
3 tbsp Mint leaves
3 tbsp Fresh coriander

Spicy dressing

3 tbsp Lime juice
2 tbsp Fish sauce
3 tbsp Brown sugar
½ cup Oil
2 Chilli
1 Orange

Directions

  1. Remove chicken meat from bones and discard chicken skin and bones. Shred or slice flesh into bite-sized pieces.
  2. Halve cucumber, remove and discard seeds, then finely slice the flesh. Mix all salad ingredients together in a bowl.
  3. For the dressing, mix all the ingredients (make sure chillies are finely chopped with seeds removed and use the orange to grate 2 tsp orange rind) and whisk together until sugar has dissolved. Pour over salad, toss well and serve.
