Spicy chicken salad
A simple, easy and cost effective mid-week meal.
|1 cup||Mung bean sprouts|
|3 tbsp||Mint leaves|
|3 tbsp||Fresh coriander|
|3 tbsp||Lime juice|
|2 tbsp||Fish sauce|
|3 tbsp||Brown sugar|
- Remove chicken meat from bones and discard chicken skin and bones. Shred or slice flesh into bite-sized pieces.
- Halve cucumber, remove and discard seeds, then finely slice the flesh. Mix all salad ingredients together in a bowl.
- For the dressing, mix all the ingredients (make sure chillies are finely chopped with seeds removed and use the orange to grate 2 tsp orange rind) and whisk together until sugar has dissolved. Pour over salad, toss well and serve.
