Print Ingredients ½ cup Pitted prunes 600 g Pork mince 3 Spring onions, finely sliced 2 tbsp Thai green curry paste ¼ cup Coriander, freshly chopped 85 g Instant noodles, cooked and drained 140 ml Coconut cream 1 Lemon 1 tbsp Lemon juice ½ cup Cashew nuts, chopped + Add to shopping list Directions Preheat oven to 180 degC. Mix choped prunes, pork mince, finely sliced spring onions, green curry paste, chopped fresh coriander, cooked and drained instant noodles, coconut cream, 2 tsb lemon rind and juice together. Place in a baking paper-lined 28cm loaf pan. Press chopped cashew nuts on top of meat mixture. Cover loaf lightly and bake for 1 hour, then uncover and cook for another 10 minutes. Cool in pan for 15 minutes before slicing.
