Pork, noodle and prune loaf
This Asian-flavoured loaf is delicious accompanied by salad greens sprinkled with chopped basil and coriander.
|½ cup||Pitted prunes|
|600 g||Pork mince|
|3||Spring onions, finely sliced|
|2 tbsp||Thai green curry paste|
|¼ cup||Coriander, freshly chopped|
|85 g||Instant noodles, cooked and drained|
|140 ml||Coconut cream|
|1 tbsp||Lemon juice|
|½ cup||Cashew nuts, chopped|
- Preheat oven to 180 degC. Mix choped prunes, pork mince, finely sliced spring onions, green curry paste, chopped fresh coriander, cooked and drained instant noodles, coconut cream, 2 tsb lemon rind and juice together.
- Place in a baking paper-lined 28cm loaf pan. Press chopped cashew nuts on top of meat mixture.
- Cover loaf lightly and bake for 1 hour, then uncover and cook for another 10 minutes. Cool in pan for 15 minutes before slicing.
