Lovely New Zealand lamb racks are the perfect dish for a Kiwi Christmas. Add a tasty pistachio crust, plus a festive salad and new potatoes and you'll be set for a Christmas meal to remember. This meal is delicious but also light enough so there will be plenty of room for trifle afterwards!

Directions

  1. Preheat oven to 200 degC. Place pistachio nuts, crushed garlic, chopped rosemary, fresh breadcrumbs, salt and pepper in a food processor and pulse until nuts are finely chopped. Mix in enough oil to make a firm paste.
  2. Press paste evenly onto lamb racks, then wrap a rasher of bacon around the middle - in between the bones.
  3. Place lamb in a lightly oiled roasting dish and cook for 25 minutes. Allow to rest for 5 to 10 minutes prior to serving.
