Pistachio and bacon lamb racks

Lovely New Zealand lamb racks are the perfect dish for a Kiwi Christmas. Add a tasty pistachio crust, plus a festive salad and new potatoes and you'll be set for a Christmas meal to remember. This meal is delicious but also light enough so there will be plenty of room for trifle afterwards!
Ingredients

| 1 cup | Pistachio nuts |
| 2 cloves | Garlic, crushed |
| 3 tbsp | Rosemary, chopped |
| 2 cups | Breadcrumbs |
| 3 tsp | Rosemary |
| 1 to taste | Salt & freshly ground pepper |
| ¼ cup | Olive oil |
| 8 | Bacon rashers, or rashers prosciutto |
| 8 | Lamb racks, French |
Directions
- Preheat oven to 200 degC. Place pistachio nuts, crushed garlic, chopped rosemary, fresh breadcrumbs, salt and pepper in a food processor and pulse until nuts are finely chopped. Mix in enough oil to make a firm paste.
- Press paste evenly onto lamb racks, then wrap a rasher of bacon around the middle - in between the bones.
- Place lamb in a lightly oiled roasting dish and cook for 25 minutes. Allow to rest for 5 to 10 minutes prior to serving.
