Caramelised Onion Jam

Caramelised onion jam makes a great gift. Decorate jars with homemade gift tags.
Ingredients
| 2 kg | Red onions |
| 1 tbsp | Root ginger |
| 1 tbsp | Fresh rosemary |
| ½ cup | Olive oil |
| 3½ cups | Brown sugar |
| 1½ cups | Balsamic |
| 1 to taste | Black pepper - ground |
| 1 tbsp | Black mustard seeds |
Directions
1. Place sliced onions, grated ginger and chopped rosemary in a large saucepan and cook gently in oil until soft.
2. Add brown sugar and vinegar and simmer for 1 and 1/2 hours.
3. Stir through black pepper and mustard seeds. Pour into sterilised jars and seal.
