Caramelised Onion Jam
Caramelised onion jam makes a great gift. Decorate jars with homemade gift tags.
|2 kg||Red onions|
|1 tbsp||Root ginger|
|1 tbsp||Fresh rosemary|
|½ cup||Olive oil|
|3½ cups||Brown sugar|
|1 to taste||Black pepper - ground|
|1 tbsp||Black mustard seeds|
1. Place sliced onions, grated ginger and chopped rosemary in a large saucepan and cook gently in oil until soft.
2. Add brown sugar and vinegar and simmer for 1 and 1/2 hours.
3. Stir through black pepper and mustard seeds. Pour into sterilised jars and seal.
