Grilled chicken breast with blue cheese sauce
Blue cheese adds a beautiful, rich flavour to the classic grilled chicken. Try this for an easy mid-week meal with a difference.
|¼ cup||Sour cream|
|75 g||Blue cheese|
|2 tsp||Lemon juice|
|1 to taste||Salt & freshly ground pepper|
|1 dash||Olive oil|
- To make sauce, combine mayonnaise, sour cream, crumbled cheese, chopped parsley and lemon juice. Season with salt and pepper to taste.
- Slice each skinless chicken breast lengthways into three or four thin, schnitzel-like pieces - this will reduce the chicken's cooking time. Season chicken all over with salt and pepper.
- Heat a nonstick frying pan, add a film of oil and cook chicken for 2 to 3 minutes on each side. Cook in batches, adding more oil as necessary. Spoon sauce over stacks of chicken and serve immediately.
