Blue cheese adds a beautiful, rich flavour to the classic grilled chicken. Try this for an easy mid-week meal with a difference.
Ingredients
¼ cup
Mayonnaise
¼ cup
Sour cream
75 g
Blue cheese
2 tbsp
Parsley
2 tsp
Lemon juice
1 to taste
Salt & freshly ground pepper

Chicken breasts
1 dash
Olive oil
Directions
To make sauce, combine mayonnaise, sour cream, crumbled cheese, chopped parsley and lemon juice. Season with salt and pepper to taste.
Slice each skinless chicken breast lengthways into three or four thin, schnitzel-like pieces - this will reduce the chicken's cooking time. Season chicken all over with salt and pepper.
Heat a nonstick frying pan, add a film of oil and cook chicken for 2 to 3 minutes on each side. Cook in batches, adding more oil as necessary. Spoon sauce over stacks of chicken and serve immediately.
