White bean dip
This recipe not only makes a delicious dip, but if you double the recipe, it can also serve as an accompaniment with roast or barbecued chicken.

|2 cloves||Garlic cloves|
|¼ cup||Fresh parsley|
|400 g||Cannellini beans|
|¼ cup||Extra virgin olive oil|
|1 to taste||Sea salt|
- Place garlic, parsley, cannellini beans, olive oil, lemon juice, rind and sea salt in a food processor and pulse until well mixed but not completely smooth.
- Check flavours and adjust with lemon juice or salt to taste.
- Spoon dip into a bowl and serve with toasted pita wedges, vegetable sticks, pretzels or the crisp treat of your choice.
