Apple, Beetroot & Chicken Salad with Sesame Dressing

An attractive summery salad packed full of colour, texture and flavour.

Ingredients

3 Chicken breasts
1 to taste Salt & freshly ground pepper
400 g Baby beetroots
1 Cucumber
1 Apple
1 packet Cos lettuce leaves
2 tbsp Pumpkin seeds
2 tbsp Sesame seeds

Dressing

¼ cup Lemon juice
1 tbsp Manuka honey
2 tbsp Sesame oil
2 cloves Garlic, finely chopped
1 tbsp Soy sauce

Directions

  1. Place chicken in a saucepan and cover with water and a sprinkle of salt and pepper. Bring to the boil and simmer until chicken is cooked through. Cool and refrigerate until required.
  2. Drain beetroot and cut into quarters. Place the dressing ingredients in a screwtop jar. Screw lid on tightly and shake to combine.
  3. Slice the cucumber into long strands, using a vegetable peeler. Discard seeds.
  4. Peel, core and finely slice the apple and chop the chicken into bite-sized pieces.
  5. Place the lettuce leaves on a large platter and scatter apple, cucumber, beetroot and chicken over lettuce. Top with pumpkin and sesame seeds, and drizzle with dressing.

Tip: Chicken can be cooked beforehand and the salad assembled at the last minute.

    What on earth are the ingredients for the dressing...not enough direction even though we can assume we may be blond and get it all wrong

      Hi RBSting, the dressing ingredients were listed above, but I've now separated them out under a separate heading so hopefully it'll be easier to follow. I hope you enjoy the salad!
