An easy, delicious and economical mid-week meal as part of the 'What's For Dinner?' series.
Ingredients

Olive oil

Onion, finely chopped
2 cloves
Garlic, crushed and chopped

Tomatoes, large ripe, peeled and coarsely chopped
1 tsp
Sugar

Salt & freshly ground pepper, to season
350 g
Pasta spirals, dried
¼ cup
Black olives
1
Parmesan cheese, freshly shaved, to serve
1 handful
Basil, to serve
Directions
Heat a saucepan, add oil, onion and garlic, then cook over a medium heat for 10 minutes until onion is softened but not coloured.
Add tomatoes and sugar, then cook over a medium heat for 5 to 10 minutes until reduced and thickened. Season with salt and pepper to taste.
At the same time, cook pasta in boiling salted water for 8 to 10 minutes, or according to packet instructions, until al dente. Drain well and serve topped with fresh tomato sauce and scattered with olives, parmesan and basil.
