Pasta spirals with fresh tomato sauce

Serves 4

An easy, delicious and economical mid-week meal as part of the 'What's For Dinner?' series.

Ingredients

2 tbsp Olive oil
1 Onion, finely chopped
2 cloves Garlic, crushed and chopped
6 Tomatoes, large ripe, peeled and coarsely chopped
1 tsp Sugar
1 Salt & freshly ground pepper, to season
350 g Pasta spirals, dried
¼ cup Black olives
1 Parmesan cheese, freshly shaved, to serve
1 handful Basil, to serve

Directions

  1. Heat a saucepan, add oil, onion and garlic, then cook over a medium heat for 10 minutes until onion is softened but not coloured.
  2. Add tomatoes and sugar, then cook over a medium heat for 5 to 10 minutes until reduced and thickened. Season with salt and pepper to taste.
  3. At the same time, cook pasta in boiling  salted water for 8 to 10 minutes, or according to packet instructions, until al dente. Drain well and serve topped with fresh tomato sauce and scattered with olives, parmesan and basil.
