Chicken mince skewers
These chicken mince skewers make a perfect mid-week meal. Serve with a simple salad or some green vegetables.

|500 g||Chicken mince|
|1 tbsp||Sweet chilli sauce|
|1 to taste||Salt & freshly ground pepper|
- Combine all ingredients in a bowl and season with salt and pepper. Mix well with your hands.
- With damp hands (to stop the mixture sticking), mould mixture into long sausage shapes and thread onto skewers.
- Heat a grill on high. Place skewers on a grill tray. Grill skewers for 5 minutes on each side or until chicken is cooked through and golden brown.
- Serve with the extra sweet-chilli sauce on the side, plus green vegetables or a salad.
