Banana Blueberry Yoghurt Muffins
These muffins are a delicious addition to the back-to-school lunchbox. You can also try using chocolate bits or walnuts instead of blueberries.
- Preheat oven to 200 degC. Sift flour and sugar into a bowl and make a well in the centre.
- Dissolve baking soda in milk and combine with eggs and melted butter.
- Pour milk mixture, yoghurt, bananas (mashed) and blueberries into the bowl and gently mix until just combined.
- Spoon mixture into 12 muffin cups and bake for 12 to 15 minutes until golden.
