Banana Blueberry Yoghurt Muffins

These muffins are a delicious addition to the back-to-school lunchbox. You can also try using chocolate bits or walnuts instead of blueberries.

Ingredients

2 cups Flour
¾ cup Sugar
½ cup Milk
2 Eggs
75 g Butter
½ cup Yoghurt
2 Bananas
¾ cup Blueberries

Directions

  1. Preheat oven to 200 degC. Sift flour and sugar into a bowl and make a well in the centre.
  2. Dissolve baking soda in milk and combine with eggs and melted butter.
  3. Pour milk mixture, yoghurt, bananas (mashed) and blueberries into the bowl and gently mix until just combined.
  4. Spoon mixture into 12 muffin cups and bake for 12 to 15 minutes until golden.
