Chicken with green beans 5/3/2010 Your Rating: Ratings: No ratings yet Make a Comment Add to Favourites 2 An easy, affordable and delicious mid-week meal Print Ingredients 1 to drizzle Rice bran oil, or Canola 3 Garlic cloves, peeled and chopped 400 g Chicken mince 1 Red chilli, chopped 4 Spring onions, chopped 300 g Green beans, cut in 2cm lenghts 3 Limes, juice only ¼ cup Fish sauce 250 g Egg noodles 1 garnish Lime, cut into wedges ¼ cup Coriander leaves + Add to shopping list Directions Heat a little oil in a wok, add garlic and cook for 30 seconds. Add chicken mince and stir-fry for 5 minutes to brown. Add chilli, spring onions, beans, lime juice and fish sauce and stir-fry for 3 to 5 minutes until beans are just tender. Meanwhile, cook noodles in boiling salted water for 5 minutes until tender, or according to packet instructions. Divide noodles between four bowls and top with chicken. Garnish with lime wedges and coriander leaves.
