Mixed prawn, crab and mussel paella

An easy, affordable and delicious mid-week meal.

Ingredients

3 tbsp Oil
1 Onion, finely chopped
2 cloves Garlic, finely chopped
2 stalks Celery, finely sliced
1 cup Rice
2 cups Chicken stock
1 to taste Salt
10 Mussels
10 Raw prawns, peeled with tails on
170 g Crab meat
4 Tomatoes, roughly chopped
2 tbsp Parsley, fresh, chopped

Directions

  1. Heat oil in a large, high-sided frying pan. Add onion, garlic and celery. Cook, stirring, for 3 to 4 minutes. Add rice and stock and bring to the boil. Cook for 10 minutes. Taste a little and add salt if needed.
  2. Scrub mussels. Stir rice mixture and add mussels and prawns. Cover and continue to cook over a low heat for 5 to 10 minutes. Discard any mussels that don't open. Stir in crab meat.
  3. Scatter tomatoes and parsley over paella and serve.
