Directions

  1. Steam or boil rice (use basmati or jasmine rice) until just tender.
  2. Heat a little oil in a wok or large frying pan. Add diced vegetables and grated ginger and stir-fry over a high heat for 2 to 3 minutes to lightly brown.
  3. Add cooked rice and soy sauce and stir-fry, tossing ingredients over a high heat for 3 to 5 minutes to lightly brown. Add a little more soy sauce as a seasoning if necessary.
  4. Fry eggs in a little oil (or poach if preferred). Serve eggs over rice.
