The tastes of fresh fish and cured prosciutto are a great combination. Serve this with a simple green salad and potatoes for an easy, yet impressive meal.

Season white-flesh fish portions on both sides with salt and pepper. Wrap one slice of prosciutto around each portion of fish, hiding two basil leaves in each wrap of prosciutto.
Heat a little oil in a large, nonstick frying pan. Add fish parcels and cook over a medium heat for 4 to 5 minutes on each side, depending on thickness of fish fillets.
