This dish, with its classic pairing of chicken and apricot, is an easy and nutritious meal for the whole family.

Ingredients

4 Chicken breasts
3 cloves Garlic
3 tbsp Soy sauce
2 tbsp Sweet chilli sauce
410 g Apricot halves
¼ cup Parsley

Directions

  1. Preheat oven to 210 degC. Place chicken breasts (skinless) in an oven pan.
  2. In a small bowl, combine garlic, soy sauce and sweet chilli sauce. Spoon this mixture over chicken breasts to coat.
  3. Drain the apricots and reserve a quarter cup of the juice. Scatter the apricot halves around the chicken breasts and pour over the reserved juice. 
  4. Bake for 20 minutes or until chicken is golden brown and cooked through. Scatter with parsley and serve with the pan juices.
