Mustard and spice lamb chops
Serve these delicious lamb chops with a simple side salad for an easy mid-week meal.

|16||Lamb chops, trimmed of excess fat|
|3 tbsp||Mustard, wholegrain|
|1 cup||Red wine|
|2 tbsp||Cranberry Jelly, or redcurrant jelly|
|1 tsp||Curry powder|
|1 to taste||Salt & freshly ground pepper|
- Rub both sides of chops with mustard and place them in a ceramic dish. Make a marinade by placing the wine, redcurrant jelly and curry powder in a small bowl, then stir well to combine.
- Pour marinade over lamb and leave to marinate for 30 minutes.
- Heat a grill on high. Remove lamb from marinade and season on both sides with salt and pepper. Place lamb chops on a grill pan and grill for 3 to 5 minutes on each side or until cooked to your liking.
