Grilled fish with avocado and herb salad
This delicious grilled fish is complimented with a delicious avocado and herb salad.

|4 pieces||White fish, 180g thick pieces are ideal|
|1 tbsp||Avocado oil|
|1 to taste||Salt & freshly ground pepper|
|1||Avocado, diced into 1cm cubes|
|2 tbsp||Olive oil|
|¼ cup||Fresh parsley|
|¼ cup||Mint leaves|
|¼ cup||Pine nuts, toasted|
- Heat a grill on high. Brush portions of fish all over with oil and season them with salt and pepper.
- Place fish portions on a rack over an oven pan and grill for 3 to 4 minutes on each side, turning once. Remove fish to serving plates.
- To make the salad, combine avocado, juice of one lemon, olive oil, parsley, mint and pine nuts (toasted) in a bowl. Season with salt and pepper and toss well.
- Serve fish scattered with salad.
