This delicious grilled fish is complimented with a delicious avocado and herb salad.
Ingredients
4 pieces
White fish, 180g thick pieces are ideal
1 tbsp
Avocado oil
1 to taste
Salt & freshly ground pepper
1
Avocado, diced into 1cm cubes
1
Lemon
2 tbsp
Olive oil
¼ cup
Fresh parsley
¼ cup
Mint leaves
¼ cup
Pine nuts, toasted
Directions
Heat a grill on high. Brush portions of fish all over with oil and season them with salt and pepper.
Place fish portions on a rack over an oven pan and grill for 3 to 4 minutes on each side, turning once. Remove fish to serving plates.
To make the salad, combine avocado, juice of one lemon, olive oil, parsley, mint and pine nuts (toasted) in a bowl. Season with salt and pepper and toss well.
