Grilled fish with avocado and herb salad

This delicious grilled fish is complimented with a delicious avocado and herb salad.

Ingredients

4 pieces White fish, 180g thick pieces are ideal
1 tbsp Avocado oil
1 to taste Salt & freshly ground pepper
1 Avocado, diced into 1cm cubes
1 Lemon
2 tbsp Olive oil
¼ cup Fresh parsley
¼ cup Mint leaves
¼ cup Pine nuts, toasted

Directions

  1. Heat a grill on high. Brush portions of fish all over with oil and season them with salt and pepper.
  2. Place fish portions on a rack over an oven pan and grill for 3 to 4 minutes on each side, turning once. Remove fish to serving plates.
  3. To make the salad, combine avocado, juice of one lemon, olive oil, parsley, mint and pine nuts (toasted) in a bowl. Season with salt and pepper and toss well.
  4. Serve fish scattered with salad.
