Chicken baked with courgettes
This delicious chicken dinner can be served with baked potatoes and salad greens for an easy-midweek meal.

|2 tbsp||Olive oil|
|2 cloves||Garlic, chopped|
|1 can||Chopped tomatoes, 400g|
|1 cup||Water, cold|
|4||Chicken breasts, skinless|
|1 to taste||Salt & freshly ground pepper|
|4||Courgettes, sliced in rounds|
- Heat a large saucepan. Add the oil, garlic and ginger, then cook for 30 seconds to release flavours. Add tomatoes, honey and water, and bring to the boil. Turn down the heat and simmer for 5 minutes.
- Season chicken with salt and pepper, then add to the pan so the chicken is covered by the sauce. Simmer very gently for 10 minutes.
- Stir in courgettes and simmer for 5 minutes more. Check and adjust seasoning with salt and pepper, if necessary. Serve with oven baked potatoes and salad greens.
