Apricot and Almond Toasted Muesli
Homemade muesli tastes delicious. Use any variety of fruit and nuts for different taste combinations.

|2 tbsp||Olive oil|
|3 cups||Rolled oats|
|½ cup||Shredded coconut|
|½ cup||Sunflower seeds|
|¼ cup||Pumpkin seeds|
|½ cup||Dried apricots|
- Preheat oven to 170C.
- Gently heat olive oil and honey together until honey is liquid.
- Combine rolled oats, coconut, almonds, sunflower seeds and pumpkin seeds in a roasting pan.
- Pour over oil and honey, then bake for 25 minutes until golden.
- Remove from the heat and allow to cool. Stir through dried apricots and store in an airtight container.
Cook's tip: Add the dried fruit after your muesli has cooled, otherwise the fruit can become leathery and too chewy.
