Croissant french toast with bacon, tomato and pesto

Croissants make for a delicious - and decadent - breakfast. Serve to your loved one at home for the ultimate breakfast in bed.

Ingredients

2 Eggs
⅓ cup Milk
1 to taste Salt & freshly ground pepper
1 tbsp Butter
2 Croissants, cut in half
4 Bacon rashers
1 Tomato, large, sliced
¼ cup Basil pesto

Directions

  1. Whisk together eggs and milk, then season well with salt and pepper.
  2. Melt butter in a large frying pan until sizzling. Dip croissant halves into egg mixture and pan-fry in butter until golden brown on each side.
  3. Meanwhile, preheat grill and cook bacon until crisp.
  4. Arrange croissants on two plates, cover with bacon and sliced tomato, then top with a generous dollop of pesto.
