Spicy lamb patties with yoghurt sauce

Directions

  1. Mix together mince, spices, breadcrumbs, onion, half the chilli and 2 tbsps of fresh coriander. Season well and shape into 12 small patties. Chill for 10 minutes.
  2. Mix the yoghurt with the cucumber, a little salt and 2 tbsps of fresh coriander.
  3. Cook the rice according to packet instructions, then toss through remaining chilli, fresh coriander, lemon juice and cashews, then season with salt and pepper.
  4. Heat the olive oil in a frying pan over a medium heat. Add patties and cook 3 to 4 minutes each side, until cooked through. Serve with rice and yoghurt sauce.
