Spicy lamb patties with yoghurt sauce

Ingredients

| 500 g | Lamb mince |
| 1 tsp | Ground cumin |
| 1 tsp | Ground coriander |
| ½ cup | Breadcrumbs |
| 1 | Red onion |
| 2 | Red chillies |
| ½ cup | Coriander leaves |
| ¾ cup | Natural yoghurt |
| ½ | Cucumber |
| 400 g | Wild rice |
| 1 | Lemon |
| ½ cup | Cashew nuts |
| 1 tbsp | Olive oil |
Directions
- Mix together mince, spices, breadcrumbs, onion, half the chilli and 2 tbsps of fresh coriander. Season well and shape into 12 small patties. Chill for 10 minutes.
- Mix the yoghurt with the cucumber, a little salt and 2 tbsps of fresh coriander.
- Cook the rice according to packet instructions, then toss through remaining chilli, fresh coriander, lemon juice and cashews, then season with salt and pepper.
- Heat the olive oil in a frying pan over a medium heat. Add patties and cook 3 to 4 minutes each side, until cooked through. Serve with rice and yoghurt sauce.
