Directions

  1. Cook rice according to packet instructions, then allow to cool.
  2. Combine rice, grated carrot, sprouts, peanuts, celery, spring onion and parsley in bowl and mix well.
  3. Whisk together soy sauce, ginger, oil and brown sugar in another bowl. Season to taste with salt and pepper.
  4. Drizzle dressing over salad. Toss and serve.
