Rice pudding can be made with any short-grain rice, including sushi rice.

Ingredients

½ cup Arborio rice
3 tbsp Sugar
2½ cups Milk
1 cup Cream
1 tbsp Orange, grated rind
¼ cup Roasted almonds, sliced lengthways
1 Orange, slices to garnish

Directions

  1. Place rice in a heavy saucepan with sugar, milk, cream and orange rind.
  2. Bring to the boil, stirring, cook at a gentle boil for 20 minutes until the rice is cooked and creamy.
  3. Cool to room temperature and then spoon into bowls. Top with sliced almonds and orange.
