Quesadillas

Quesadillas are a oexican speciality combining melted cheese and soft tortillas.
Ingredients

| 6 | Pork sausages |
| 2 tsp | Vegetable oil |
| 1 | Red onion |
| ¼ tsp | Chilli flakes |
| 400 g | Chopped tomatoes |
| 8 | Tortilla wraps |
| 1½ cups | Tasty cheese |
Directions
- Grill sausages for 10 to 15 minutes, turning until cooked. Heat the vegetable oil in a pan over a medium heat. Add the sliced red onion and chilli flakes and cook for 6 to 8 minutes until golden. Add drained chopped tomatoes and bubble for 2 minutes until thick. Cool. Slice sausages and add to tomato sauce.
- Brush tortillas on one side with oil and lay four, oiled side down, on a board. Share out the sausage mixture between the four tortillas, scatter over cheese, then sandwich with other four tortillas, oil side up.
- Heat a frying pan. Cook each quesadilla for 2 to 3 minutes per side, until tortillas are toasted and cheese is melting. Put on a baking tray and cover with foil.
- Serve cut into four, with a side salad.
