Gourmet fish burgers

When fish is on special at your local store, buy up large so you can make these delicious burgers.
Ingredients

| 1 | Egg |
| 1 cup | Breadcrumbs |
| 4 | Fish fillets |
| 1 | Cucumber |
| 1 to taste | Salt & freshly ground pepper |
| 2 tsp | Cider vinegar, or white wine vinegar |
| ½ cup | Mayonnaise |
| ¼ cup | Dill |
| 2 tbsp | Capers |
| 1 tsp | Dijon mustard |
| 1 to serve | Salad greens |
| 1 loaf | Ciabatta bread |
Directions
- Preheat the oven to 220 degC. Put beaten egg and breadcrumbs in separate shallow bowls. Dip fish fillets in egg, then roll in breadcrumbs. Put on a baking tray and bake for 15 minutes until fish is just cooked.
- Peel cucumber (if skin is thick), halve lengthways and remove seeds. Slice and put in a colander - sprinkle with 1 tsp salt and leave for 15 minutes. Rinse and then squeeze gently to remove liquid. Mix with vinegar and season with pepper.
- Mix mayonnaise with dill, capers (in brine) and mustard. Slice ciabatta into eight slices. Place salmon, cucumber, mayonnaise and salad in ciabatta. Serve with potato wedges.
