Cacciatore means 'hunter' in Italian and in cuisine, the word refers to a meal prepared 'hunter-style' with tomatoes, onions, mushrooms and herbs.

|2 tbsp||Olive oil|
|250 g||Button mushrooms|
|800 g||Canned tomatoes|
|½ cup||Kalamata olives|
|½ cup||White wine|
- Rub chicken pieces (with skin and bone attached) with salt and pepper. Heat oil in a large frying pan, brown chicken in batches and then set aside.
- Reduce heat, then add the chopped onion, sliced celery, chopped carrot, crushed garlic and halved mushrooms to the frying pan. Cook until tender.
- Increase heat and add the tomatoes, olives, wine and herbs, then put chicken back in the pan. Cover and cook for 30 minutes, stirring occasionally.
- Check flavours and add salt and pepper as needed.
