Ingredients

25 g Butter
1 Onion
2 tsp Flour
1 tbsp Dijon mustard
1 to taste Salt & freshly ground pepper
1 cup Chicken stock
250 g Creme fraiche
2 tsp Tarragon
4 Chicken breasts
½ cup Breadcrumbs
½ cup Tasty cheese
1 tbsp Fresh parsley
1 tbsp Olive oil

Directions

  1. Preheat oven to 190ºC. In a large pan, melt butter and cook chopped onion over a medium heat for 5 minutes until soft and golden. Stir in flour and cook 1 minute. Add mustard and season well. Gradually add chicken stock, stirring until smooth.
  2. Remove from heat, then stir in crème fraiche, tarragon and chicken breasts (cooked and shredded previously).
  3. Spoon into a large ovenproof dish. Mix breadcrumbs, grated tasty cheese, fresh chopped parsley and olive oil together. Season, then scatter over the top. Bake 20 minutes until bubbling and golden.
