Smoked salmon and watercress sandwiches
Whether you're hosting for afternoon tea or an evening soiree, miniature smoked salmon sandwiches are always a hit.

|½ cup||Cream cheese|
|½ cup||Sour cream|
|1 tbsp||Fresh chives|
|1 to taste||Salt & freshly ground pepper|
|16 slices||White sliced sandwich bread|
|200 g||Smoked salmon|
- Mix together cream cheese (at room temperature), sour cream, chopped chives and 1 tsb finely grated lemon rind in a small bowl. Season to taste.
- Spread the bread slices with a thin layer of mixture and place in a single layer on a bench.
- Cover half the bread slices with smoked salmon and watercress leaves and then cover with the other bread slices.
- Remove crusts from bread and cut into quarters.
