If you really want to spoil someone, this fudge makes a delicious homemade gift. Pop some squares of fudge into a nice jar tied up with ribbon or a chocolate box you have lined and covered with wrapping paper.

Directions

  1. Bring sugar, milk, butter and vanilla slowly to the boil, then simmer for 10 minutes, stirring constantly until mixture changes colour to golden.
  2. Roughly chop and lightly toast macadamia nuts.
  3. Take fudge off the heat, stir in honey, then beat with an electric hand beater until thick. Add the chopped macadamias quickly and then, using a rubber spatula, pour fudge into a greased dish. Leave to set for 20 minutes before cutting.
