Honey and macadamia fudge
If you really want to spoil someone, this fudge makes a delicious homemade gift. Pop some squares of fudge into a nice jar tied up with ribbon or a chocolate box you have lined and covered with wrapping paper.

- Bring sugar, milk, butter and vanilla slowly to the boil, then simmer for 10 minutes, stirring constantly until mixture changes colour to golden.
- Roughly chop and lightly toast macadamia nuts.
- Take fudge off the heat, stir in honey, then beat with an electric hand beater until thick. Add the chopped macadamias quickly and then, using a rubber spatula, pour fudge into a greased dish. Leave to set for 20 minutes before cutting.
