Coriander chicken with mango salsa

|¼ cup||Lime juice|
|¼ cup||Olive oil|
|1 to taste||Salt & freshly ground pepper|
|¼ cup||Coriander leaves|
|½ tsp||Chilli powder|
|½ cup||Red onion|
|½ cup||Coriander leaves|
- Place chicken,skinless and boneless in a ceramic dish and add finely chopped garlic, lime juice, olive oil, salt, pepper, roughly chopped coriander leaves, paprika and chilli powder. Refrigerate overnight if possible but for at least 1 hour.
- Chop mango, place in a bowl with finely chopped garlic, onion, coriander leaves and chilli, and mix gently.
- Lift chicken from marinade and cook in a frying pan for 5 to 6 minutes on each side until cooked through.
- Warm tortillas on a griddle or in the microwave and serve topped with sliced chicken and mango salsa.
