Baked Salmon with Dill Honey and Mustard Sauce

Directions

  1. Mix mayonnaise, sour cream, mustard, dill, parsley, honey, lemon and salt and pepper to taste in a bowl. Cover and refrigerate until needed.
  2. Preheat oven to 200 degC. Remove pin bones and place salmon in a roasting dish. Pour over combined oil and lemon juice and season with salt and pepper.
  3. Cook the side of salmon for 10 minutes, then remove from the oven. Just before serving brush with melted butter and place under the grill for 2 to 3 minutes.
  4. Serve salmon with dill honey mustard sauce and vegetables or salad.

    I think many Kiwis don't know about the use of Dill. My wife comes from Russia and it is widely grown and used over there. We have struggled in the past to find Dill in NZ but now grow our own.
