Spicy corn fritters

Serves 30

Ingredients

4 Spring onions
2 tsp Red curry paste
400 g Corn kernels
¼ cup Flour
2 Eggs
1 tbsp Soy sauce
1 tbsp Fish sauce
3 tbsp Rice bran oil
30 optional Basil leaves

Directions

  1. Mix the spring onions, curry paste, corn and flour in a bowl.
  2. Add lightly whisked eggs, soy sauce and fish sauce and mix to combine.
  3. Heat a little oil in a large frying pan and cook heaped teaspoonfuls of mixture until golden on both sides. Drain
    on paper towels.
  4. Serve topped with a basil leaf.
