Spicy corn fritters
|2 tsp||Red curry paste|
|400 g||Corn kernels|
|1 tbsp||Soy sauce|
|1 tbsp||Fish sauce|
|3 tbsp||Rice bran oil|
|30 optional||Basil leaves|
- Mix the spring onions, curry paste, corn and flour in a bowl.
- Add lightly whisked eggs, soy sauce and fish sauce and mix to combine.
- Heat a little oil in a large frying pan and cook heaped teaspoonfuls of mixture until golden on both sides. Drain
on paper towels.
- Serve topped with a basil leaf.
