Great on a cooler night, serve on its own or as a side to a meat main.

|400 g||Lamb mince|
|¼ tsp||Chilli powder|
|2 tbsp||Fresh parsley|
|2 tbsp||Fresh coriander|
|1 to taste||Salt & freshly ground pepper|
|¼ cup||Pine nuts|
|1 cup||Basmati rice|
|1 cup||Tasty cheese|
- Preheat oven to 180C. Heat a frying pan over a medium heat, add lamb mince, finely chopped onion, crushed garlic, all the spices, freshly chopped parsley and coriander and cook for 5 minutes until meat has browned and moisture has evaporated.
- Add lightly toasted pine nuts, rice and egg, and cook, stirring for a minute.
- Halve capsicums and remove seeds. Stuff with filling and sprinkle with cheese. Place in a baking dish and cook for 20 minutes.
