Lime & coconut panna cotta

Serves 4

Start this dessert the day before and let it set overnight. Preparation: 15min plus overnight to set.

Ingredients

2 cups Cream
1 cup Coconut cream
1 Vanilla bean
½ cup Sugar
1 Lime
2 tsp Gelatine

Directions

  1. Place the cream, coconut cream, vanilla (split open), sugar, lime juice and rind from one lime, in a saucepan and heat until almost boiling, stirring to dissolve the sugar.
  2. Place the gelatine in a small bowl with 1 tablespoon of water.  Sit the bowl inside a larger bowl of boiling water. Allow to sit for several minutes until liquid, then stir until smooth. Pour gelatine into the hot cream and mix well.
  3. Pour the mixture into 4 lightly oiled ramekins. Chill overnight.
  4. Run a hot knife around the outside of the panna cotta, then invert onto plates.
