Roast rib of beef with mustard marmalade glaze
You won't get more heart-warming than this roast rib of beef. Serve with potatoes and red wine.
|1½ kg||Beef rib roast|
|2 tbsp||Olive oil|
|1 to taste||Freshly ground black pepper|
|½ cup||Orange marmalade|
|2 tbsp||Wholegrain bread/toast|
- Preheat the oven to 200 degC. Place the rib of beef in a roasting tray, brush with olive oil and season with black pepper. Mix all the glaze ingredients together in a small jug or bowl.
- Cook beef for 15 minutes, then reduce heat to 160 degC and continue to cook for a further 1 1/2 hours. Spoon
over half of the glaze for the last 15 minutes of cooking.
- Keep the meat warm and allow to rest for 15 minutes before carving. Meanwhile, gently heat the remaining
glaze to serve with the carved beef.
