Roast rib of beef with mustard marmalade glaze

You won't get more heart-warming than this roast rib of beef. Serve with potatoes and red wine.

Ingredients

1½ kg Beef rib roast
2 tbsp Olive oil
1 to taste Freshly ground black pepper

Glaze

½ cup Orange marmalade
¼ cup Brandy
2 tbsp Wholegrain bread/toast

Directions

  1. Preheat the oven to 200 degC. Place the rib of beef in a roasting tray, brush with olive oil and season with black pepper. Mix all the glaze ingredients together in a small jug or bowl.
  2. Cook beef for 15 minutes, then reduce heat to 160 degC and continue to cook for a further 1 1/2 hours. Spoon
    over half of the glaze for the last 15 minutes of cooking.
  3. Keep the meat warm and allow to rest for 15 minutes before carving. Meanwhile, gently heat the remaining
    glaze to serve with the carved beef.
