Fragrant chicken with dates
Cook's tips: spice up this dish by doubling the spice quantities given. You can increase and vary the capsicum variety to give a medley of colour.

|1 tsp||Ground coriander|
|½ tsp||Ground cinnamon|
|1 tsp||Ground cumin|
|1 tsp||Ground ginger|
|½ tsp||Chilli powder|
|½ cup||Green olives pitted|
|400 g||Chopped tomatoes|
|1 cup||Chicken stock|
- Heat oil in a large deep-sided frying pan and brown chicken in batches over a medium to high heat until well-coloured on both sides. Set aside.
- Reduce heat and add sliced onion, garlic, salt and spices to the pan, adding a little extra oil if needed. Cook for 2 to 3 minutes.
- Return chicken to the pan and add olives, sliced capsicum, tomatoes, sugar and chicken stock. Cover and cook for 20 minutes.
- Remove lid and add dates. Cook a further 10 minutes, uncovered. Serve with crusty bread.
