Food truck recipe - Steak and Cheese Pies

Recipe by Michael Van De Elzen. All recipes are based on food sold in TV ONE series The Food Truck.

Ingredients

½ Onion, sliced
½ clove Garlic, crushed
250 g Rump steak, sliced into stir fry strips
2 Portobello mushrooms, sliced
½ tsp Dijon mustard
12 Cherry tomatoes
1 cup Potato, cooked
3 tbsp Olive oil
3 tbsp Milk, reduced fat
1 to taste Black pepper
1 tsp Parmesan cheese, grated

Directions

To make these pies you'll also need 4 x 10 cm diameter volauvent cases, precooked, warm.

  1. Preheat grill. Heat a heavy-based pan. Spray with oil and add onion and garlic. Stir fry for 1-2 minutes.
  2. Add beef, mushrooms and mustard and stir fry for 2-3 minutes. Add tomatoes.
  3. Pile mixture into warm volauvent cases.
  4. Mash potato with olive oil, milk and pepper to taste. Place in a piping bag and pipe potato onto the top of each pie.
  5. Sprinkle with Parmesan cheese.
  6. Place under preheated grill until potato is golden.
