Chicken & bean nachos

Nachos are quick and easy to make. They can be a filling after-school snack or a shared dish in front of the TV and can be made from whatever ingredients you have on hand.

Directions

  1. Heat oil in a large deep-sided frying pan or saucepan and gently cook finely chopped onion for 5 to 8 minutes until onion is softened. Increase heat and add chicken mince. Cook until chicken is lightly coloured.
  2. Add chopped tomatoes, mild chilli beans, brown sugar and season to taste with salt. Gently simmer for 15 to 20 minutes until mixture is thick and saucy.
  3. Place half the corn chips into a shallow baking dish and spoon over the bean mixture. Sprinkle with grated tasty cheese and grill until cheese is melted and bubbling.
  4. Serve with extra corn chips on the side, and guacamole and sour cream to spoon over.
