Chicken & bean nachos

Nachos are quick and easy to make. They can be a filling after-school snack or a shared dish in front of the TV and can be made from whatever ingredients you have on hand.
Ingredients

| 2 tbsp | Olive oil |
| 1 | Onion |
| 450 g | Chicken mince |
| 400 g | Chopped tomatoes |
| 400 g | Mild chilli beans |
| 1 tsp | Brown sugar |
| 1 to taste | Salt |
| 300 g | Corn chips |
| 1 cup | Tasty cheese |
| 1 to serve | Guacamole |
| 2 to serve | Sour cream |
Directions
- Heat oil in a large deep-sided frying pan or saucepan and gently cook finely chopped onion for 5 to 8 minutes until onion is softened. Increase heat and add chicken mince. Cook until chicken is lightly coloured.
- Add chopped tomatoes, mild chilli beans, brown sugar and season to taste with salt. Gently simmer for 15 to 20 minutes until mixture is thick and saucy.
- Place half the corn chips into a shallow baking dish and spoon over the bean mixture. Sprinkle with grated tasty cheese and grill until cheese is melted and bubbling.
- Serve with extra corn chips on the side, and guacamole and sour cream to spoon over.
