After spices and heavy food it is lovely to enjoy a refreshing iced dessert, regardless of season. Fresh mango can be used, in which case make a sugar syrup and combine with sliced fresh mango. The ice can be made days in advance. Serves 4-6, ready in 10mins plus time to freeze

Ingredients

800 g Mangoes - sliced
¼ cup Lime juice
2 Eggs

Directions

  1. Place mango slices and juice in the bowl of a food processor with lime juice.
  2. Process until pureed. Transfer mixture to a plastic container, seal and freeze until solid.
  3. Place the frozen mango back into the food processor along with the egg whites and process until well mixed (you may need to let the mango defrost a little before managing to get it into the food processor).
  4. Transfer back into the plastic container, cover and freeze for 8 hours or overnight.
