Fragrant winter compote

Directions

  1. Combine the rhubarb (cut into 1cm pieces), apple (peeled, cored and cut into 1cm pieces), pears (cut into pieces), sugar and spices in a large heavy-based saucepan.
  2. Place the pan on the heat and bring the mixture to a boil over a medium heat, stirring constantly. Reduce the heat to low, cover and simmer, stirring now and then until the fruit is tender. About 10 minutes.
  3. Remove from the heat and leave to cool without stirring. Refrigerate the day before you plan to use it.
